Originating from the Eastern Indian State of Odisha and dating back to early 1970s – The concept of this uniquely placed Odisha style Dum Biryani is a well celebrated delectable Odiya cuisine which is a much sought after delicacy.
The term “Dum” refers to a slow-cooking technique where marinated meat or vegetables and semi-cooked basmati rice are layered in a handi (pot), sealed with dough, and cooked on a low flame, allowing the ingredients to steam in their own juices.
